Q: How do you get it ground up it a solid block?

I find it works best when dissolved in warm water and kept in the fridge as a syrup. Very little effort and convenient to use.

Q: Best way to store it? Tips? ideas? How long will it last? Could it go bad or moldy??

Best to scrape with a knife into soft flakes and put into a jar. Leave the rest in packaging. Jaggery has a long shelf life.

Q: what is the color - is it light or dark colored jaggery?

It looks as it does in the picture. I'm not sure what "light jaggery" looks like. After keeping this awhile, it got kind of hard. I break pieces off and grate it when I need some. Looks light when grated.
