Q: how thick is the blade?

The blade is approximately 1/16th of an inch I would guess without measuring. The blade is stiff and rigid, not in any way flexible. Good for cutting dough, and for scraping a smooth hard surface, but not useful for cleaning dough out of a curved vessel or bowl.

Q: Does the one with the wooden handle need to be routinely treated with mineral oil to keep from cracking?

No, it doesn't need to be treated with any oil. I put it on the dishwasher or wash it by hand and l let it dry. I'm very satified with my purchase. Hopefuly this help ;)

Q: Confusing listing. Are there 2 or 3 blades?

Single blade per scraper. I use it for cutting dough or cleaning counter!
