Yes you can, however for a better outcome it is always best to use one that covers everything at once to give even pressure

Q: Would you recommend this large size for all projects incuding smaller items?

I use the middle 9x9 for my projects, big and smalll

I love the ability to set the temp and time.It lets me work with a variety of materials.The press is sturdy and durable.There are plenty of YouTube videos on how to use the machine as well.
