Q: Would this hold approx 1 cup of food….like mashed potatoes?

The smallest ones will not hold a cup of food. Maybe a 1/2 cup. These containers are nice though. The lid snaps on tight and they're sturdy. I like mine.

Q: Can 2 year Olds open this themselves?

It is easy for younger kids to open but I don’t know if a 2 year old could. You need to pull up at least 3 of the tabs to get the lid off and they’re pretty secure.
