Q: What kind of chocolate do I use with the mold?

For best results, use a high quality barred chocolate instead of chocolate chips or bakers’ chocolate. If using dark chocolate, add 1 tsp of shortening to every 2 oz. of chocolate to soften it for better curls. No need to add shortening to milk or white chocolate, as they are already soft. Let curls chill in refrigerator to make them easier to handle. Use food tweezers to move chocolate curls, as heat from fingers may melt them.

Q: Can I buy the chocolate mold and dome cover separately?

Unfortunately not, those components are only available with the Set purchase.

Q: Is there a source for the chocolate rings for the girolle?

The last one I had was a few years ago. I've been looking and looking and can't find them any more. It's unfortunate I loved to decorate cakes with it.

Q: How does this work with making chocolate curls?

It works great if you purchase the chocolate especially made for this which, but they're a bit pricey. It is probably a compound chocolate so it's softer so you could probably make your own by using a compound chocolate and adding a bit more fat to it if it's not soft enough.
