Without trusting the description it is hard to know exactly how this bread is made. It has the right taste although Rosemary can mask a lot. I enjoyed the bread but I thought it was just too expensive for what it is. It stays moist for a while but not really fresh. I started buying the Scalded Rye, also available on Amazon, and others from the same supplier - they tasted genuine and good although completely different from the Gail's.
