How many cakes .. best guess will this one tub cover?

I covered a 12 inch, 3 inch high cake and a 8 inch, 4 inch high cake and still have leftovers.

Is it easy to color and is it good for covering and decorating cookies?

Yes, it is easy to color, just takes mixing. I have never used it on cookies. I use fondant on cakes/cupcakes and then mainly just for decorations. I prefer good old butter cream icing for taste, but you can do so much with fondant as far as decorating. I do prefer the taste on this brand compared to others.
