Cangshan HAKU Series 2-Piece Carving Set with Walnut Box, Forged X-7 Damascus Steel, 501158

I have a couple of mid-level Shun knives that I really love for their function as well as their look.I wasn't very familiar with the Cangshan brand of knives but I recently had a chance to try out their steak knives, specifically the "HAKU" series (which is made using Damascus steel), and I decided to do a lot of research about the company.I won't get into the whole history of the brand since that is easy to find online and I encourage you to do so. I will just say that they are very well regarded!To make a long story a little bit shorter, I love their steak knives!Now onto this carving set.It is magnificent!67 layers of true Damascus steel with a Rockwell Hardness rating of 60 +/- 2! It is extremely sharp and with a mirror finish it is beautiful to look at!I was able to slice a eye of round roast beef wafer thin and with ease. This is something that I used to have bring out my electric deli meat slicer for!I love the African blackwood handles which not only look nice, most importantly, they feel great in my hand!I should also mention the fork which is also of a great quality. It has the same African blackwood handle and is made of a heavy steel that won't bend under slight pressure.The storage box is made of walnut with a nice simple picture of the knife set engraved into it, along with the company name. It also has a very strong magnet that keeps the top held on tight.Sorry Shun, but Cangshan has easily become my new favorite knife company... Especially the "HAKU" series!

This makes an amazing gift. Comes in a beautiful walnut box with velvet inside. The box is strong and sturdy. The knife is SUPER sharp!! Both the knife and fork are stunning pieces of art. Very well made. Quality materials. So worth the price!!!

There is another review here with a bunch of pictures and goes into the specifics of the company, so I'll just say I've been loving this knife. Very sharp, as all knives should be, but very light and durable at the same time. It's not one you'll get tired from holding. I use it to carve out chuck and rump roasts into their partitions (steaks, hamburger, etc) before I cook and I couldn't be happier with this knife and the tough carving fork. I only have one other knife that I make sure to hand clean, dry, and oil, and this one has been added to the short list of knives I will make sure never gets mishandled.

I accidentally punctured my lung with this after it sliced off my arm. I knew it was sharp, but golly-gee! The warranty will cover my arm, but they say my lung is a bridge too far. Dang-it.I made all that up. However, this blade is indeed very sharp. That really isn’t the point, though. (Yes, pun, I know.) The set is from one of the top manufacturers of cutlery in the world. You get a set that is as close to perfection as either piece can be. They arrive in a beautiful wood box, elegant in its omission of boasting. The set will last a very long time, remaining as dependable as day one.That is what you receive and it is well worth the price.

I'm just your typical home cook, I know enough but am not an expert. That being said I really liked this knife. Comes in a pretty nice looking box along with carving fork. The lids is magnetic and opens easy, but stays shut even if you hold it upside down and shake it.This is going to sound blasphemous but I used it to carve up a large watermelon. It was so easy holding it with the fork and slicing through with ease. Highly recommend

The first thing that grabs you is the display box. The rich look of walnut on the outside and the felt lining on the inside, along with the magnetic latch, lend itself to the luxurious feel. The carving knife and fork are as much works of art as functional tools. The knife and the fork are full tang with beautiful dark wood handles. The 2-pronged fork has a slight curve to it which aids in carving, and the Damascene markings on the carving knife denote high-quality forging. The knife itself is very sharp and takes the steel quite easily. All in all, I rate the carving set very highly.

This knife is just so nice. I didn't think I could appriciate a knife as much as this one. It's so nice to cut with. It's case is beautiful to start with, but the knife is well balanced, feels nice and when I used it to cut it just felt amazing. Just absolutely beautiful. No one is allowed to touch my knife now. It's all mine.
