The Gelato/ Ice Cream machine seems to be very sturdy and the parts that matter seem to be quality. We have made three batches of gelatoThe compressor is strong and cools quickly.The agitator/scraper/auger inside the freezing chamber is driven by a very capable gear motor that was able to keep turning after the gelato was harder than ice cream from the grocery store.I let the first batch sit for 10 minutes after the freezing cycle finished and the gelato froze to the walls of the freezing chamber.The ad says it can pasteurize up to 85C but the control panel will go no higher than 75C.Apparently it goes up to 80C but I have not measured the temperatureTouchscreen was not in English but the seller gave us the secret codes to change it to English.The pasteurizing chamber has heat coils and insulation on the sides but not the bottom and the stirring paddle is at least 1" from the sides. As a result, the liquid heats unevenly and tends to burn at the top edges. It seems to work best if the pasteurizing chamber is filled almost full without any eggs or thickeners.The tube from the pasteurizing chamber to the valve is about 2' long and holds a cup or two of liquid (that is not heated or pasteurized). That tube is also difficult to clean and has very little slope so if the liquid is more viscous than water, it flows very slowly and sticks to the inside of the tube. The plug valve is removeable (otherwise it would be impossible to clean) but has two design flaws: The o-rings get damaged by the edge of the outlet tee and the blind end captures liquid (which can spray hot liquid on the operator through the shaft seal if the valve is opened fully)The silicone gasket on the front of the freezing chamber does not stay in the door. And it is slightly smaller in diameter than the groove so it is very difficult to put it back in properly and get it to stay until the door is closed. The replacement gasket that shipped with the machine is totally different and does not fit at all.I would prefer if the pasteurizing chamber had a way to automaticaly cool the mix after pasteurization.The instructions that shipped with the machine were for so.ething different but the seller sent me a PDFAlso the plastic scrapers were retracted fully and bolted tightly to the agitator so the first batch did not freeze properly ( a frozen rind formed on the freezing chamber) and there appeared to be a plastic bushing missing at the front so the auger drifted forward and scraped on the door. I suspect it was built correctly at the factory but I got an Amazon return or someone (who didn't know how it was supposed to work) tried it after it got off the boatThe Gelato machine seems capable but before I could install it in a commercial setting, I would want a modified drain tube/valve. I would also like a different stirring paddle for the pasteurizer, the ability to increase temperature to 85C, ability to have the paddle continue turning for a period of time after the pasteurization temperature was reached, better door gasket.
