No they are all together in a single foil wrapper

Yes and No! there are 3 colours - red (high E and B), blue (G/D) and white (A/lowE). Note they come with a spare top E.

Q: How old are the strings?

Brand new. I usually buy 5 or 10 packets and change them every 2 to 3 gigs. The strings seem fine even when several months old. They only age and rust once they are on the guitar and exposed to sweat etc. If cleaned up after playing they are good for 3 gigs of so. I sometimes just change the top three and leave the bottom strings for 5 or 6 gigs and they are fine. After a few gigs the strings are usually still fine but they do not sound as bright as new strings.

The strings are colour coded. The 8 refers to the thinness of the high E (1st string). Rotoscoped are good value strings and usually come with a spare high E (the one most likely to break). If I were you I'd go for a set of 10s as a good start point, if you find them too difficult to bend (should be fine) then switch to 9s next time.
