Is it similar to wholemeal or is it rougher?

Hi. I would say it's rougher. It has a lower gluten content than modern wheat, so is less "elastic". Makes a great tasting but crumbly textured bread. Great for toasting and doesn't have the high blood sugar impact of modern wheat flours. (I'm type 2 diabetic). Hope this helps.

Does anyone know what the gluten content is, compared to wholemeal and spelt?

My research has shown me that Einkorn flour is the only flour non-hybridized today. It is the tall wheat that was grown in the beginning- early BC. Therefore the gluten content is the lowest (around 12%) of all wheat grown today in the world. The second lowest in gluten content is Kamut wheat. Spelt ranks third with still considerable less gluten than today's whole wheat- even before the GMO influence. So, organic whole wheat as we know it, has up to 65% gluten.Hope that helps. I use einkorn, kamut and some spelt.

Can any one share their bread recipe please?

Mum uses the recipe on the back. Sometimes, though, she reduces the quantity of this flour and makes it up with white spelt, so it's a little lighter. Happy Baking 😊
