Best Keto pancake mix
I am Keto so pancakes are a guilty pleasure for me even if they are Keto/low carb. I used a 10 ounce package and mixed it with one cup of water for a thicker batter. I added one teaspoon of Lorann’s Butter Vanilla emulsion. These pancakes were fluffy and absolutely delicious. It is a little pricey but well worth it. This is my go to brand for pancakes. Well done Birch Benders.

Keto is low glycemic
After being hit with diabetes a few years back, breakfast with pancakes became a terrible idea for my blood sugar levels. So when I discovered Birch Benders I was really intrigued. The main flour source is Almonds, which is easy on my blood sugars so I jumped right in. I originally tried the Paleo Mix which I really enjoyed but was still a bit on the high side of carb count. Then while out grocery shopping I discovered their Keto mix and noted the carb count was lower than the Paleo. I decided to give it a try even though the mix is more expensive than the Paleo. Not sure why this is as they contain almost the same ingredients. The Keto mix is a bit drier than the Paleo mix and also has a little less flavor. I offset this by using Almond Milk (unsweetened) instead of water and also mix in Hemp hearts for added protein and other good things. All in all I like them but not as much as the Paleo. My wife enjoys pancakes too and has voted for the Paleo as well. She too has commented the Keto is drier and has less flavor, but you should give it a try. It's worth the $6 and you may find a better way to add flavor back in while getting the lower carb count. On an unrelated note, I too used to bend birches up in the northern part of Michigan. I didn't think it was a thing till I saw it on a package of pancake mix. Who knew.

Great way to start the day!
While the texture is ever so slightly gritty, and they aren't sweet, or quite as fluffy as a typical pancake mix, I can eat pancakes and waffles again! I'm gluten intolerant and before knowing that I remember as a kid I always wondered why I felt sick after pancakes. I can eat these and feel powered up for the day, and they are delicious with a light drizzle of syrup and fresh fruit. My husband doesn't like them as much as the regular kind but he will eat them and we both actually feel healthy and energized after a pancake breakfast!

Recipe Change 2022
I have been using Birch Benders Keto pancake/waffle mix regularly since around 2019. I liked the old recipe because when made into waffles it had the gritty texture and something close to the taste of cornbread. I would make the whole bag (with 1.75 cups of water and 3 tbsp of oil) and keep them in the fridge to use in place of bread. Other than the high cost, it was ideal - not too high in fiber, no sugar alcohols, tasted good, and was easy to pair with almost anything.I was in the habit of reordering from this 3-pack listing without checking it first and was surprised to see the recipe change so drastically from my last order. I've attached a photo with both the old and the new versions' ingredients and nutrition side-by-side for easier comparison. As we can see, the new version has almost twice as much fiber and a significant amount of sugar alcohols per serving. It also has a slightly higher net carb count, less fat, and slightly fewer calories.I made up a bag of the new version as waffles as I would normally do. I found that the batter had a much more rubbery texture than the old version. During the cooking process, the waffles got dark brown much more quickly than the old recipe would. They did hold together much better but had a strange unpleasant almost plastic-y smell where they got over-browned. They did cool and reheat well (in the microwave) though and smelled much better after reheating. I suspect they would freeze well also.As for taste and texture when eating, I would say that the new version is definitely an improvement if a simulation of a standard high-carb waffle is what you're after. The taste is neutral other than a slight bitter chemical aftertaste. They're slightly sweet, but not too sweet. I didn't notice any obvious erythritol cooling effect. The texture is much softer and fluffier than the old version. It's not gritty at all and comes very close to the texture of a regular Belgian waffle. They work a lot better with syrup and sweet stuff than the old version did.I'd recommend the new recipe for people who want a traditional waffle/pancake mix, aren't sensitive to sugar alcohols, and who need more fiber in their diet. Unfortunately for me, the new recipe isn't going to work out for me both because I'd bought this as a cornbread substitute and because my digestive system doesn't like the excess fiber and erythritol. So, I'm dropping my rating from 4-stars to 3-stars. The new recipe will definitely work for some people better than the old one, but it's not for me.

Awesome pancakes even if a little gritty
I buy a lot from Amazon and I rarely review anything, but this pancake mix was just so good, I had to review it. I've been on a Keto diet for 6 weeks now. I measure my glucose and blood ketones every morning. The pancakes I made including some sugar-free syrup had no negative effect on my ketosis. And the pancakes were so easy to make. Just add water and whisk for a bit. My girlfriend who is not on a Keto diet thought they tasted fine. I would say they're 90% as good as any normal pancakes. Yes, they are a little gritty, but that's probably just the almond flour, which is fine with me, because frankly, I'm just grateful to be able to eat pancakes on a Keto diet! Only negative I can think of is that they tend to fall apart when transferring from one plate to another if you use a fork instead of a spatula. It's not that big a deal though.

Great taste but small package
I love the convenience and the taste and fluffiness of these pancakes. However I was shocked and disappointed in the size of the packages. I expected the same size as the Paleo packages I was buying at Costco. One whole package will only make 12-16 pancakes. So not a good value. Sadly I won't reorder until the price comes in line with the package size. I'm back to making from scratch.
