Q: How would this compare to the squid brand?

I haven't tried Squid Brand. I grew up in Thailand and my favorite fish sauce, and the one that tastes most authentic is Tra Chang brand (which used to be available on Amazon and was MUCH less expensive than Red Boat. I ordered this brand recently to try because of all the hype but from now on I will pay the postage to get Tra Chang elsewhere. The flavor is so much richer and fuller than this!

Q: Where can I find an ingredient list?

It is on the back of my bottle............100% pure black anchovy first press and sea salt. That is it. No other ingredients such as msg, water etc. Just these two items

You can add a small amount when making meatballs, roasts, or any other meats. It helps add that umami flavor and depth to your dishes -- and don't worry, your food won't taste fishy. I also add it to vegetable dishes, soups, stews, pasta sauces, and fried rice. Excellent for making nuoc cham (dipping sauce for spring rolls). However, fish sauce IS salty, so you need to take that into consideration and adjust your recipes accordingly. I bought the 68 oz size bottle because I was going through the locally available 8.75 oz bottles way too fast. Added bonus: the bulk size is more economical, as well.

Q: What's the expiration? Is this the type of thing that'll never go bad if (a) unopened in pantry and (b) opened in fridge?

This product stays stable in the fridge with cap on. I recommend everyone to use this organic product. A 100%, the best product I have ever used. I am a Chef.
