Q: Is this made of stainless steel?

No the whisk is not included. The Whisk Wiper is sold seperately and you'd need to already have the whisk attachment for your mixer. Whisk Wiper is not made with any metal parts.

Q: Will it work with the dough hook of a 5 qt Kitchenaid Artisan?

No it won't. I have the Whisk Wiper and it is not necessary for the dough hook as the top of the hook has a large plate it sits on. It is best used with "whisk" attachments

Q: How do I know which way to put this on? One side is flat and kind of soft, the other side is hard but has deep grooves.

The soft, flat side will face the bowl. This soft flat side is intended to get the batter onto it as it will be easy to wipe on the bowl edge. The hard side has grooves to help you guide the wire loops into the slits. So you are basically pushing the whisk into the hard side.
