Q: In the last picture, what is sitting on top of the mug? Is there another piece to buy for brewing maybe?

That's the Fellow 'pour over attachment' for the travel mug. It takes a paper filter, and it's not included with the travel mug package. I was confused about it as well when I was browsing the features of the mug. I hope this helps!

Q: Does plastic touch your coffee? or is the inside of the lid plastic or stainless or ceramic?

No it doesn't. While the exterior of the lid is actually plastic, the bottom of the lid (the only part that would come in contact with your coffee) is stainless steel.
