I would say no. This is a glaze for ceramics and must be kiln fired. Metal will melt.

can this be unglazed for a matte finish?

Stroke and Coat IS a glaze, so it will be shiny on it's own. It doesn't require a shiny overglaze, so, if you want a matte finish, you might try an UNDERGLAZE, maybe, or look for a glaze designated as matte.
