The sound level out of the 3.5mm jack is low - even with airplay source (iphone) set at max volume. am i missing something?

No, you are not missing something and the reply from the manufacturer is total BS. This product is designed that way and it is a PITA. Mine is the same and others have the same complaint. It's not a problem with the five volt supply because other audio products run on five volts and output a normal, line level, signal. I'm needing to replace my old Apple Airport Express and this is the only product on the market right now that does that (audio only). (Please, someone correct me.) I cranked the gain all the way up on my preamp and I still can't get enough volume because of this crappy product. So here's what you can do: Get a separate digital-to-analog converter--they cost about $20-$25. Connect the optical output from the Belkin product to the optical input on the D/A and you'll be good to go. Belkin seems to have no interest in providing a firmware update on this device and it's not even clear that a firmware update will do any good if the problem is in the analog output section.

How do I attach the two wires coming out from each of my two studio speakers?

It's not an amplifier this is not its purpose. It can deliver audio TO your amplifier, then the speakers would be connected to your amplifier.
