What is the thinnest slice in inches & mm? I want to make oven baked potato chips.

Can you slice zucchini lengthwise with this?

Can you adjust the slice thickness?

Hi, Blade is permanent but the blade dial allows you to change thicknesses. For slices, it adjusts to any thickness from paper thin to 9mm, for julienne size, it is fixed at 4.5mm and 9mm. Aryz Gramercy Kitchen Co.

If the blade is permanent, how does it change for waffle fries or julienne or french fries?

You can make waffle fries or chips but not regular "handcut" fries. I have only used this once to slice potatoes & onions for au gratin potatoes. Found the thingie that secures the potatoes awkward to use. Did not stay "on track".
