Q: What is the difference between an Western and Asian knives? I never heard of a sharpener specific to each.

Zwilling apparently tailors this sharpener to their knives. From their website: "The angle between the blade and the steel should be approximately 15 degrees for ZWILLING knives. Santoku knives and all MIYABI and Kramer made by ZWILLING knives need to be 9-12 degrees." As is stated in the Amazon description: "One side features a 15 Degree angle for Western-style knives, the other a 10 Degree angle for Asian-style knives." Most manufacturers (Shun, Global, Wusthof, Zwilling, etc.) sharpen to an angle between 14 and 17 degrees. The Western side can probably be used successfully for these knives. The Asian side is used for Zwilling and Wusthof santoku knives and some Japanese kinives. This sharpener will probably not work on older Western knives with an angle of 20 degrees.

Q: Will this sharper work for forged Serrated knifes

You cannot sharpen serrated knives with this sharpener.

Q: Does work asian thick meat cleaver ?

This knife is intended for use with Zwilling knives which have blade angles of 15° (Standard) and 10-12° (Asian). A thicker knife may not fit into the slots to sharpen.
