It could hold phone straight up, but may not be very secure.

Yes, very easy to open. Put on a flat surface. Hold in position and gently pull the two legs at the front upwards and stop when you get to the height you want. It may seem a bit stiff to start with but it will work if you are gentle but firm.

Would this suit an s20 ultra

I use it with an iPhone 12 Pro Max and it works OK with that. I think the S20 Ultra is a similar size so should be fine.

My phone is a Samsung, with overall dimensions of 6 and a half inches tall and 3 inches wide and 7/16th inches thick. the stand has open sides, so thickness is not an issue. As the advert informs this stand is designed for a cell phone, So if your device is any bigger than a phone . Your answer is NO
