Very sharp and excellent handle wherein the steel cutting shaft extends through the handle in one piece of stainless steel, so it will be secure after many hours of cutting. The long handle offers a better than average place hand grip. to control this very sharp and effective cutting tool. The engineering of sharp blade and long handle is an excellent balance for good control of your cutting effort. UPDATE: I now have two of these excellent kitchen knives. After trying many other similar knives, this knife cuts food products better than any other knife. But do not use this knife for anything except food & it will hold an edge for 1000+ cuttings. UPDATE: Nov. 14, 2019, these knives have exceeded 1000 cuttings of food. Large handle is a valuable safety feature for a firm grip when hands get wet.

I had two of these, purchased a good 20 years ago and they've held up wonderfully. I've never seen them in stores so that I could expand my collection, then came across the Amazon purchase offer. I LOVE these knives. The price may make you think they are inferior - they are not!

Sharp little knife with a fine point on it. It’s a little too stiff for me. I’m used to a paring knife with a bit thinner of a blade and more flexibility. This one feels really stiff. You can’t shape your cuts by working the blade a little bit, it is extremely rigid and won’t flex at all. Otherwise, it’s an excellent knife. The handle is comfortable, it seems well-made, does the job.

I have an old one of these knives and the blade is identical but the handle is much smaller. I have a small hand so I prefer the old one. This handle is quite heavy and thick. For that reason I'm disappointed. However, it cuts well.

This knife fits perfect in your hand. I find it easy to control when turning to remove or carve small pieces. It remains sharp for EVER. Wow, amazing that it does stay sharp for a long time. Its been about 2 1/2 years now and still going.
