Just The Job
I'm very happy with my purchase of 6 of these cans of Seville orange cooked peel and pulp. I've found it hard to get Seville oranges from supermarkets over the last few years, during the season of Jan to Feb, and buying the oranges online is much more expensive, whether fresh or frozen. Preparing the marmalade is as easy as pie. All you need to do with one of these cans is tip the contents into a large pan on the hob, add 425ml of water and 1.8kg (4lb) of sugar and bring to the boil. Then simmer and stir for about 15 minutes until setting point is reached, checked by wrinkles forming on half a teaspoon of the pan contents on a cold plate, when pushed sideways with a finger. It worked perfectly for me first time. Just one can made 9 small jars of marmalade, as good as any I've made from fresh fruit. Don't forget to add a knob of butter to the pan while simmering...it clears the froth that forms on the top. To sterilise the jars and ensure the glass doesn't crack while filling, I pre-heat the jars in an oven at about 110°C, just over boiling point. I use the original caps on the jars (originally bought from a shop as marmalade) which 'pop' when the jars are cooling, confirming they are air-tight.
