So good! Umeboshi is umami with a fruity sour kick.
this stuff is just perfect. maybe scraping the actual umeboshi off the seed is a little better tasting. Maybe not. A great alternative to anchovies is Caesar-style dressings and delicious right on top of rice.

Yum! Oishi!
I love this paste! It is beyond tasty. I purchased the shiso flavoured version & I put it on rice, tofu, seaweed & anything else that needs some ume zing.

Convenient, not quite as good as whole umeboshi
This is definitely a good alternative to whole umeboshi if they are unavailable or just not convenient. It's very convenient to use and lasts a long time because the flavor is very strong so only a little needs to be used at a time (unless you're like me who will down a tablespoon at a time lol). However, I do find that the paste one does not have the same delicious texture as umeboshi, and two does not have the same fruity fragrance or taste. It seems to trade a bit of that for a more salty taste, which is fine but when I'm eating umeboshi rice balls I find using the paste a little underwhelming. All in all, a fine alternative and definitely a more convenient option to get the pickled plum flavor, but it can't beat using real, whole umeboshi.

Very good flavor to mix with something
After I read the review I was compelled to buy it. It was a decent size for the price and flavor was great. I thought you cannot eat itself because too much salt, but when mixed with something it is great! I mix a small amount with a bowl of rice to make a rice ball, mix with sliced cucumbers and add a vinegar to make a sunomono salad, and dilute with hot water to make soup base. You can be very creative. I am watching sodium, so I enjoy a bit by bit.

Tasty but artificial
Tasty but honestly I didn't read the ingredients before purchasing. The color was weirdly vibrant and when I did read the label, I was disappointed. Ended up throwing this out and purchasing a different product that has no artificial colors or components that tastes exactly the same and looks better on top of being better overall. The price point should've warned me. If the ingredients don't matter to you, it'll definitely give you a punch salt and sour if you're into that.

First time trying ume boshi paste. Great with sushi rice

Tasty and Convenient
I used it to season my rice with lunch (please ignore the sad tamagoyaki in the other side, I was in a hurry). It was very good tasting, nice strong flavor. I also used it in dressings for vegetables and cold soba noodles. My dressing recipe using this is: 2 parts rice vinegar, 2 parts sesame oil, 1 part koikuchi shoyu (Japan Brewed Kikoman is good enough for this, American brewed is honestly not, they taste very different.) and 1 part of ume paste. Just whisk it together. I put it on a cold soba salad with sliced daikon, carrot, cabbage, cucumber, kale, and green onion or chives. It's also good with moyashi/ beansprouts.

its not pure ume paste... lots of other ingredients (and plum isnt even listed on the ingredients on the bottle- it says japanese apricot but im going to assume thats the plum?!) but it is pretty delicious! the squeezy bottle is handy. will buy again.
