The best cookbook I've ever had
This is the best cookbook I've ever had. I'm surprised I even wanted a hard copy cookbook now in the days of Pinterest and all the great recipe websites. But 3 different friends had sung this book's praises and I decided this was a good reason to try it myself. The thing that makes it stand out to me is it explains, in normal-people terms why, through trial and error, they came to the conclusion it's best to do something a certain way. The photos are wonderful. It is a good, easy read for sitting on the sofa, too, that is if you want to work up an appetite :0) The book has its recipes categorized at the front for things like "The Reluctant Cook," "The Tired Cook," etc. As far as detailed cooking, I'm not the type to buy my own chili peppers, cut them up and roast them myself, etc., so even though the book explains how to do this, I usually opt for a substitute, like peppers from a jar, etc. The recipes still come out great. The range of difficulty is from very simple -- for the days you want to whip up something quickly -- to more elaborate -- for the days you're feeling adventurous. But the results are all impressive in my opinion. HELPFUL NOTE: I am going to start using this book with a BOOK STAND -- because of its newness it doesn't stay open very easily. My husband has our book stand stashed up in his office somewhere since the last move, but I'm digging it out soon. If you don't have one, they're inexpensive and worth a purchase. It's so nice to have a good size, real book to look at constantly as you go rather than rechecking your phone or waking up an iPad, etc. Who said books are irrelevant?

Good variety and well organized
Love the pictures, and the explanations about the recipes. I have remade some classic recipes using the tricks and tips in the book and they’ve been great!

Great recipes. Easy. Fast. Great variety. This us a great gift for any cook… even experienced ones!

Wonderful Cookbook Bad Organization
Amazing cookbook with a bad organization in the glossary of the book that is confusing by there numbering system. The back index is helpful because you can lookup by recipe. The recipes we have tried are delicious minus one that just wasn’t our flavor but nothing wrong with the recipe. My husband and I will continue to cook out of this book. One thing to note I believe all the chicken recipes call for skin on. We just modify the recipe because we don’t like skin. Many chicken recipes also have bone in too. The Peruvian chicken is amazing and we have already made it multiple times. We just bake the chicken breast instead of how they do it and it turns out delicious.

Love this cookbook!
I have the Kindle version of this cookbook so I did not have the issues with page numbers, indexing, etc that some of the prior reviewers had. I LOVE this book! I have already made three of the recipes and they all turned out perfectly. That is what I expect from Cook's Illustrated! I was worried that I may already have most of the recipes being that I own many of the CI books. But there is a lot of new material for each of the recipes. This cookbook will pass the test of time. Speaking of time, I like that each recipe gives an accurate estimate of time spent to make the dish. In addition to the ingredients there is a list of materials that are needed.I highly recommend this book! I will be buying a few copies for Christmas gifts. This would be especially good for newlyweds.

If you only had one cookbook . . .
This is a well edited cookbook of basic, essential, recipes . . . Each recipe has a robust head note which explains why the recipe was included and what specific techniques and ingredients provide the best result. After the head note the cookbook contains a short summary of the steps, tools and time required to accomplish the recipe - think of it as a heads up. Finally, the last section of each recipe contains the recipe itself in simple straightforward and comprehensive steps. The goal of ATK for this book is to have the reader master 10 recipes so that they can be made without needing the book and then maybe tackle 10 more. With 20 recipes mastered, a cook would be well ahead of most folks cooking today.

fabulous cookbook
I simply love this cookbook. I found it in a bookstore and knew I had to have it. It's got everything you'd want as a beginner/mid-level cook from mouthwatering pictures to easy instructions. It's an incredible variety of recipes from Thai to Italian to down home southern. As someone who has now cooked for a few years, I wanted to venture out and try cooking things I normally wouldn't. Also, It also simply looks great displayed on a bookshelf! I have several favorite books and this is definitely one of them, if you're unsure, visit a bookstore first.

Not only basics
I bought this cookbook thinking I might pick up an idea or two. I was wrong - there is such a wealth of information here that I know it will become a favorite.

Too much info. Makes cooking seem overwhelming not easy or simply. You do not know where to start with this book.

Great essential cookbook.
I like that it explains why the process is what it is, in less than a full page. I have already bought a 2nd one to give to our son's girlfriend. In fact, our son also thinks he would like 1 for himself. Great 'basic essentials ' cookbook.

Great!
As always a great book from America's Test Kitchen ! Each and every recipe turns out great every time! Recipes are explained, the development and why it works the way it does. I go back to this book again and again.It is a fantastic addition to my cook book collection. I can highly recommend this book for beginners and advanced cooks.
