Jean-Patrique Chopaholic Stainless Steel Boning Knife, 8 inch – Thin & Flexible Fish Fillet Knife

Yeah, I know, a knife's a knife. But, I really like this one. Don't know yet how well it'll hold an edge, but it's very sharp out of the box, and I have a feeling it won't need frequent sharpening and will sharpen up well when the time comes. That's just a guess, though. The main thing I like is the handle and weight balance. The shape of the handle and the rearward weight balance make it very comfortable and nimble for uses like peeling fruits and vegetables, much better than more traditional paring knives I've owned. The whole knife is quite lightweight, but the blade doesn't seem so thin as to cause concerns about durability or accidental bending. Overall, a surprisingly nice paring knife that's pleasant to use at a very good price.

It has peeled many a Palisades peach for peach jam. Great little knife.

I prefer the one piece steel kitchen knives whenever possible, no issues with cracked or otherwise worn out handle scales. This boning knife is flexible, and takes a keen edge. Very pleased with this purchase.

Nice light easy to handle knife. Watch your self. But if you’re getting this you already know exactly how to do that. This is no joke it will cut your finger right off. The only drawback I have but I can’t give it less than five stars because I knew that going in is it has no sheath. I’m trying to figure out what to do with it. Right now I just keep it inside the box it came in. But other than that I am absolutely impressed. It cuts through fish like a hot knife through butter. Squid,salmon like it’s nothing. You should see how perfect my calamari pieces look and how even my salmon cuts are. And how it can just take that skin right off the salmon. But remember no sheets and watch those fingers. not sharp enough for apple, but all in all it's nice, as it is easy to clean and no germs hidden! much better if you have a cap for travelling purpose.

Just used my new serrated knife for the first time, and I love it. I cut through the lemon so easily. It will be great for tomatoes, too. I like that it is all one continuous forged piece, because it can be cleaned so thoroughly. No joints to hold bacteria. I would give it more than 5 stars if I could.

This was used as veg/cheese knife in my small kitchen. It's easy to clean and rinse being one piece of stainless steel. Sad to say it lasted me 2.5 years until I broke the tip (my fault). I will get another one!

I remember watching Jacques Pepin on one of his broadcast shows saying when you are fileting fish you need a VERY sharp knife. I LOVE this knife. It performed beautifully when I cut raw salmon from a salmon steak to be able to place the meat on the uneven portion to even up the piece big enough for 2-3 people. It is certainly very nice because it is all one piece. It has a very nice weight also. I am not an expert on knives, but I know what they feel like when I like them, and this one is superior. Thanks very much. I have never owned a filet knife before this and can tell what a difference it will make in my cooking.

Really happy with this purchase! Very well made, super sharp, nice and light and a nice handle to grip. I’ve been using it to prep game, mainly pheasants and pigeons and it’s the perfect size and length to get in to carve out breast meat.

2 years i had knife never needed sharpening still razor sharp. It peel anything with ease and far better than any peeler i use easy to handle and comfort to use. I have knock off work unit on to hard floor and not even a scratch. I would say that the cost is stupid low for a great knife.
