What type of millet is used?

Hi there, We use Organic Foxtail Millet.

I find these taste very similar to regular pasta. I can’t tell much of a difference. You might buy one and try it. The texture is also almost identical. During cooking, there is a lot of millet residue that makes the water look milky, but you can rinse that off or just drain it. Doesn’t impact the taste.
