Great quality, repackaging is the norm
I was hesitant to buy this product after reading reviews about the flour being repackaged. However, this seems to be the norm across all Italian cooking supplier websites, as the paper bag shown appears to be the 55-lb bag, which obviously must be broken down for the small quantity available here. My flour arrived well-sealed in a clear bag, with a label, expiration date, supplier name and location, and proper processing disclosures. It seemed fresh and created the most wonderful lasagne noodles! Can't wait to try making other kinds of pasta with it. Highly recommended.

Used 1/4 Antimo Caputo 00 Pasta & Gnocchi Flour to 3/4 Regular Flour for a Perfect Blend
When I first used the flour, I wasn't sure that I liked how firm it made the gnocchi. After cooking much longer than normal, the gnocchi was still on the hard side.Next batch I decided to experiment and used 1/4 Antimo Caputo 00 flour, and 3/4 regular flour and it came out PERFECT! The gnocchi cooked up great, slightly firm, and didn't get soft or mushy with reheating like it did when only using regular flour.

Great packaging and price
I was worried, but no more. Excellent packaging and product looks authentic and high quality.

Worth it for pasta
I just tested it side by side with King Arthur unbleached all-purpose flour on an egg pasta dough rolled into thin sheets and cut into ribbons. KA pasta had a bite to it (in other words it was firm), but it wasn't chewy. Antimo Caputo flour gave the pasta a nice chew. The difference was significant enough that I think it's worth the extra expense and the trouble to order this product on-line.

What's in the bag?
I received my order today and it is not as pictured. It is in a plastic bag with a very simple label, and although it does say pasta and gnnochi flour, it does not say 00 flour, which is much more expensive. There is no nutrition facts label either and I thought that was a requirement by FDA. I'm going to do more research on that. I paid a lot of money for this flour and seem to have no recourse through Amazon for refund or replacement. I have no idea what's in the bag. When I buy something, I expect to see the item arrive exactly as I bought it.

Great for pasta
Works excellently when combined in equal amounts with Semola to make pasta dough. I don’t use any other flour.
