A.C. Legg's - OP Smoked Andouille Sausage Seasoning for 25 Pounds, 19.5 Ounce - with Cure

This was our first time making this type of sausage. It was perfect, loved the flavor, great tasting. I like mild heat so it was perfect. Going to be order more soon, ran out due to every liking it so much.

A.C. Legg has it goin' on. Everything is fantastic. I've used the andouille spice mix many, many times before and will definitely use it again! This is for sure, my go to spice mix for andouille. It is so much better than store bought. Will for sure buy again and would definitely recommend.

Seasoning is really good. I use a bit more in a batch. If you do a 5 pound batch. Normally you would use about 8 ounces of the Seasoning but I used 10 ounces because I wanted more flavor in the meat. Taste good that way. Gonna make some gumbo with it soon to see how much better it makes that. Store bought andouille barely has flavor and all taste the same. Wish it wasn't so expensive to get authentic andouille from Louisiana shipped to Illinois.

It was a good Andouille mix. However, I found it to lacking in flavor and especially spice, it has plenty of salt. But I ended up adding a good amount of cayenne a little bit of red pepper, garlic powder and paprika to finally bring it to a level that I thought better represented.

Tried other makers and we keep coming back to this for Andouille. Biggest thing is you will want to add more spice (red pepper, jalapeno powder) as this is pretty mild. Great building block if you want to try something custom. We add mace, fennel and Aleppo chili powder for ours.

Good combination of seasoning and salt. Has just a little bite

We love it!! The perfect amount of seasoning. This is definitely a keeper!If only Amazon would stop placing sticker labels over the instructions; that would be quite helpful. Every package of seasoning we have ordered has these stickers right on top of the directions. That is a bit frustrating .
