The different colours of oil the brown darker colour is when you dispose of the oil
I love this as I do have knowledge about this item as I use to use them in the restaurants I worked in for deep fryers

We use it daily. A must have at any restaurant with fryers.

Very Handy Tool
The two colors of good and bad oil are accurate. It helps my restaurant staff know when to filter or dump our fryer oil. My only complaint is that the rubber on the end of the dropper does not last long if used with hot oil!
