What is the shelf life and does it need to be refrigerated after opening?

Not sure about the shelf life. Mine expires in April, 2020, but I have had it for some time. No refrigeration. Just keep in cool, dry place.

Why not buy from Kinh Arthur for $6.95?

This is the king Arthur’s Flour store. They have it on Amazon but they don’t have it on the King Arthur website. And it’s twice as much here. Makes me kind of mad.
