Top quality knife for the home cook
This knife is the sharpest we have ever had and cuts beautifully. It feels good in the hand due to the design of the handle and the overall weight. It also looks impressive; the ebony handle is quite distinctive. My wife is delighted. The blade is very thin and has been hammered to allow the knife to slide easily through the meat, veggies etc. The steel is high carbon VG10 steel manufactured in Japan, the best stainless steel for home cookery. When the knife needs sharpening it should be ground to a 15 degree angle not the 20 or more typical for European knives. As this is Damascus steel. use a fine grit of 1000 or finer. A minoSharp knife sharpener will do the job. Don't try to sharpen it with any other knife sharpener or a steel as these will ruin the edge. You could use a whetstone but this requires a lot of skill. But the knife is made of the finest materials so it will not need sharpening often. Reasonably priced for what it is -- a top-of-the-range quality knife for the home cook.

Japanese Hammered Damascus Knife
The YOUSUNLONG 8 inch Slicing Knife arrived in a stylish black box with subtle branding on, the lid lifts off smoothly to reveal the beautifully crafted blade, it is located in a clear bag and sheath with a plastic point protector on, there was no sign of a leather sheath for me as advertised but I am thinking this may have been a one off due to other customer images showing it. As I removed the knife to check it over I firstly noticed the Damascus hammered blade, it is eye catching and beautifully made, the steel layers and hammered top edge add so much quality and character, the handle is made from natural ebony and the bolster and tang finish it off nicely with red banding details on. The knife feels comfortable to hold and it is well balanced, I actually look forward to prepping the food using this knife due to the comfort and the blade sharpness along with its cutting angle. Overall, stunning blade using a 67 layer Damascus technique, there are 33 layers either side of a stainless steel VG-10 core that is sharpened beautifully, the handle is very dark so you cant see much of a grain or character to the wood, there is a slight lip between the bolster and the tang that drops the quality of it a little for me, also the edge doesn’t quite meet perfectly here either, very sharp and cuts effortlessly whilst being comfortable to use for long periods at a time, did not receive the leather sheath but I think this was a one off, I would happily purchase other variants and proudly display on my magnetic knife stand in the kitchen, thank you.

good knife but could be better, and needs to be for the price
This Japanese Hammered Damascus Steel Carving knife is a really nice knife with a sharp blade and cuts very cleanly, however if you read the title and description of what you are ordering it’s a bit misleading. The title says you get knives multiple times, but you don't, its only 1 knife (Just in case anyone was wondering). The knife is very nice with a super sharp blade, and it feels well balanced in the hand. It has a very nice black coloured wooden handle and a silver solid end to protect it with a cool Japanese symbol on the end. It comes in a very nice presentation style box and even includes a leather sheath to protect the blade if you keep it in a drawer. It should be noted though that the sheath has a popper fastening strap but it doesn't reach either way round the knife so you can only do it up when there is no knife in it, which makes it a bit pointless. You also get a nice little cleaning cloth to keep the blade looking shiny and I have to say it carves meat very well. Overall, for £69.92 it’s a nice knife but very expensive, especially with issues with the sheath etc that you would not expect to have if you spent this much on a knife. It needs to be priced around £40 as it is to make it better value for money.

Slight imperfection to handle, but lovely blade.
This is a nice blade which chops well and is well balanced, due to its quite large handle. I don't mind the handle as I have quite large hands and it is comfortable for me to hold and control, although I can see someone with smaller hands struggling to use it. I would say it is close to a butcher knife/carving knife as there is no flex to the blade needed for a filleting knife. The steel has a nice Damascus pattern running through it as well as some hammering forge marks along the top of the blade. I was disappointed in the finish on the handle with one of the dyed red bamboo details having gaps in it between the ebony and the metal. Not what I would expect from something this expensive and shows that the quality control might not be up there. The sheath was ok and had a welt in it (bit of leather between the front and back pieces to stop the blade cutting the stitches.) and is one of the better ones I have seen supplied with a knife. Cuts well and is razor sharp, I just can't help thinking about the handle imperfections and if I had spent my own cash on it I think it would be going back for a replacement.

Solid sharp blade
This is nice looking sharp knife. Comes in beautiful box with knife blade cover. I like the mirror polish and high quality solid steel blad material and it's sharpness. It's lightweight and I feel comfortable holding it. Would recommend 👍

Perfect for the amateur or experienced chef!
This is a really great knife, lovely to hold, a good weight and very well presented. Ideal gift. Cuts cleanly on salad and fish. Very impressed with the price of £69.92 too. Verdict: strongly recommend - you won’t be disappointed.

Le tranchant est de qualité et le rectitude sans défaut.un conseil à l’usage : Ranger vos doigts 😅… Il sera faire plaisirs, temps au cuisinier qu’à au passionné de coutellerie. Il fait partie d’un gamme qui peut aller jusqu’au sabre pour les plus passionnés 😉. Rapport qualité/Design/usage/prix (75€) c’est un magnifique couteau de chef japonais, certes au tarif haute de gamme mais la finition de matière du manche et le style et tranchant de la lame est elle aussi haut de gamme 🤩.

Le couteau vient dans un beau coffret en carton plutôt complet, çà présente bien. Je ne sais pas pourquoi un holster est fourni? certes il est de bonne qualité, en vrai cuir si j'en juge par l'odeur, mais a quoi sert il si on ne peut pas le fermer pour sécuriser le couteau une fois inséré dans celui ci? Le tranchant est par contre très bon et le couteau est bien équilibré.

Ce couteau Japonais est une vraie réussite. Dès la première prise en main, on sent la qualité : la lame est parfaitement tranchante et coupe tout sans effort, que ce soit la viande, le poisson ou même les légumes plus durs. Le couteau glisse dans les aliments avec une facilité déconcertante. Le manche en bois est superbe, très agréable à tenir et bien équilibré. Il ne glisse pas, même quand les mains sont un peu humides. On sent que c’est un outil pensé pour durer. L’étui en cuir est un "plus" sympa, il est solide et élégant. Il permet de ranger ou de transporter le couteau sans risque d’abîmer la lame ni se couper. Franchement, c’est un excellent rapport qualité-prix. Il est aussi beau que performant, et depuis que je l’utilise, je prends encore plus de plaisir à cuisiner. Je valide! ⭐⭐⭐⭐⭐

Déjà commençons par aborder le sujet qui fâche, ce n'est pas du vrai damas. C'est du motif damas ajouté au laser. C'est assez clair vu le rendu. Du vrai damas ne ressemble pas à cela. Cela dit, le vrai damas coûte une véritable fortune, donc rien que le tarif affiché donne l'indication. Cela me gêne car ce n'est pas forcément indiqué assez précisément. La lame n'est pas reliée électriquement (testé au multimètre en position continuité) au pommeau (l'arrière métallique du manche) ce qui signifie qu'il n'est que décoratif, et que la lame est tenue par de la colle époxy, en l'absence de rivets. Ce n'est pas forcément problématique si la colle est de qualité, mais ça laisse un peu de doute, face au rivetage qui est bien increvable. Autrement, le couteau est bien affuté d'origine, difficile de vérifier la qualité réelle de l'acier. On s'en tiendra à ce que dit le fabricant. Le manche est gros et lourd, ce qui est assez confortable pour ce genre de couteau, mais peut être peu adapté aux plus petites mains. Globalement, le couteau est joli, bien présenté dans son coffret cadeau, néanmoins, tout semble fait pour donner l'impression haut de gamme à un couteau d'entrée de gamme.

Je ne suis pas une spécialiste en coutellerie je ne peut donc pas dire si le couteau est en acier damassé ou si les effets ont été rajoutés. Ce que je vois c'est un couteau lourd mais pas trop. Une lame tranchante. Un manche simple est facile à tenir en main. Pour moi et pour l'instant c'est un Bon couteau.
