No, leave it attached, it has two purposes, to prevent injury to your thumb and also (slightly less likely) a stray thumb catching someone's eye

It depends on what he uses it for. Practicing I would say 8 and sparring (if kickboxing) 10 or 12. The oz determine how much padding is in them which also means how much protection they need.
