Q: How many oz's of meat will it marinate at once.

This is a powerful machine. Though the owner's manual uses 3 pound examples, with the regular size drum that comes with the machine you can marinate at least 5 pounds at one time. The owner's manual says that with the large drum that you can buy separately the machine can marinate up to a 22 pound turkey!

Q: Does this product use a vacuum to help in the marinating process?

Yes. It pulls a negative vacuum to help pull the seasoning into the protein. It is a scaled down version of what poultry processors use.

Q: How meat does the marinade express hold

Up to 10 lbs, but that would be boneless chicken breasts. All depends on the volume of the meat.

Q: Will this work for marinating strips of meat for beef jerky?

Yes this does sliced slab meat for jerky. I've marinaded sliced chicken, beef, and deer.
