Great flour
Love this flour! I use it for making sourdough bread almost every week. While it's a little more expensive than American grown flour, I think the quality is higher and it has worked well in everything I've baked so far.

All of our food is low grade. This flour is like clouds. So smooth. So soft. So good! No allergic reactions.

A pasta making dream flour
This is wonderful flour. I have now made a number of kinds of pasta with it, mixing it with Bob's Red Mill semolina flour and King Arthur Flour's durham flour (which is like a whole wheat version of semolina- both are from durham wheat....semolina is made from the endosperm of the wheat whereas the flour is a fine grind made with the outer parts of the wheat as well). I have also used this 00 flour in a bread or two. It is like the all purpose flour that we are all used to using, but it's a very fine grind, making it perfect for rolled or extruded pasta making. And it's certified organic !

Good when it's priced correctly
One of the reasons this flour works so well for people with gluten sensitivity is that American flours are processed with bromide (poison!) in order to increase shelf life. Italian flours are not. People may not really be gluten sensitive at all! Just poison sensitive - imagine that.That this flour has now almost tripled in price is gouging. I have bought from this seller before. You got two bags for $10.99. Now one is $12.99.
