Q: What is the largest sized joint of meat you could you put inside

About 1 kg and it was well cooked

Q: I want to cook to 43C, will the water bath show this temp on the gauge and stay at it? It look like it only does from 45C.

I'd suggest that NOTHING actually cooks at that temperature. In fact by trying to do so you are taking some grave risks. Why?? Because the temperature you quote pretty much falls into the optimum degree range for FOOD POISONING BACTERIA to multiply. You do realise that 43C is only 6-7degrees above normal body temperature don't you? Most hot water systems are set at a higher temperature than 43C or about 110F at around the 50-55C mark. I've done military training at temperatures higher than that inn the Middle East. However I so use mine to heat water for the initial Black Pudding mix which id optimal at 40-45c and it checks out within a degree or two. There is also lag of +- about four degrees when the machine switches on and off automatically... If you want the ultimate in temperature control and a switching tolerance within say a degree you'll have to pay at least twice as much a possibly three time. However it's sous-vide cooking is quite temperature tolerant and if anything I'd always set mine a degree higher than demanded rather than a degree or two lower. It averages out. BUT TAKE HEED FROM A FORMER FOOD HYGIENIST about cooking temperatures.

Q: Might we know where this is made in please? imports from prchina etc may not always comply to safety specs for coating materials. is it teflon?

It is made in "PRC" (people's republic of China). I cannot be absolutely sure but as a material scientist I would think it was a Chinese version of Teflon. It should not come into direct contact with food anyway although there could be accidents. It does its job as a water bath well (I don't use it for cooking)

Q: Does the water tank have a non stick coating or is it metal/stainless steel (or something else?)

I have had mine for a little over a year (ie within the 2 year warranty period). I had assumed that with the non-stick coating it would be OK to leave water in it from time to time when using frequently (the manual does not say otherwise) but it developed a rust spot. When I rubbed this off with a non-stick scourer it started leaking all over the place, so the bowl is obviously made of very thin tinplate rather than aluminium as I had assumed. Customer service are refusing a refund (I will get one eventually, I am sure) so beware - this must be cleaned and thoroughly dried after every use or it will rust.
