I suppose so, but if that's your plan and you're not an electrician, you should hire one. I would take the unit apart, and replace the cord with #12 NM or BX depending on your local jurisdiction. Because it draws about 11 amps (120v), I would put it on a separate breaker

Q: How long does it take to heat the (cold) water in the tank if power to the unit has been shut-off for a period?

The spec in the manual says the recovery time is 18 min. But mine seems faster than that. I have not timed it but it is not slow. Seems to me it is around 5-10 minutes to fully heat up.

Q: Does the 6gallon fit for a shower or two?

You would have to take very fast showers
