There are difference between small "home" machines and larger commercial machines. Minimum temperatures and coolant power are two of them. As a result care must be taken. The manual calls for a Brix measurement (from a refractometer) of 9-10. Alcohol in the mix will change this. Alcohol will also reduce the viscosity. Both the viscosity and the freeze temperature have to be controlled. Without a longer explanation here is what works. 1. Keep the percentage of alcohol below 10%. Keep the % of sugar by weight above 7%, keep the viscosity up. Common food additives that will increase the Brix and Viscosity without adding sweetness are glycerin and psyllium husks. I use Agave for sweetening as it has good viscosity and sweetness. 180g Agave, 285g Tequila, 900g Water, 200g lime juice, set machine at -6c.(edit: The Tequila is 80proof which is ABV - the recipe is weighed. )If you want to use a commercial mix, use it, but skip the alcohol altogether.

We use this in our slush machine at home. Easy to mix. Our favorite flavor with or without alcohol.

I purchased this item in a couple of flavors for my birthday party last year. It is very simple to use. I used it with a margarita mix machine. The shaved ice, the slushy mix and if you wanted to add a little bit of alcohol, you can do that or you can have virgin margaritas. It’s just a really nice treat in the summertime.
