Q: What kind of nonstick coating is it?

I believe it's a teflon coating. I have used the rice cooker about 50 times and it still looks brand new. I highly recommend this product!

it does not retract. it just dangles loose

Q: Does rice stick on the bottom?

No not at all. Just follow the instructions and when the light turns off for rice done. Use the rice spatula that comes with the cooker and no issues. I highly recommend this rice cooker.
