Q: I presume this thing could easily handle big chunks of unpealed ginger, but can someone confirm? I'd like to do ginger and garlic with it.

It can handle large chunks with ease. I have been using this for ~2 years a I use a LOT of garlic. I have found that it's easier to peel garlic before using the garject on it. The unit does get clogged up with the skins and it's not easy to scrape the remains out of it. It does a phenomenal job on garlic and I have a large collection of units that didn't earn my approval. I keep fresh ginger in the freezer. When I need it, I grate the frozen (unpeeled)ginger with a microplane grater. I've tried using both peeled and unpeeled and can't tell the difference in the finished product. I agree with the other reviewers that ginger is best grated with a microplane unless your recipe calls for ginger juice.

Q: Is this press stainless steel or aluminum ? We had an old aluminum press turn black so I'm worried this one would too.

You know, I really can't remember. I would not recommend it though as it proved way to difficult to use with the garlic skin still on. Looking at America's test kitchen, they recommend this model. Check it out. Kuhn rikon 2315 epicurean garlic press. Next one I buy will be that one. Hope that helps.
