When I first came across this a year ago, I didn’t really know how to use it exactly, but I was curious. So I purchased, but didn’t use for several months. Once, when I was too lazy to dice onions for my spicy porridge, I added this to simmering oatmeal, without sautéing, and it turned out amazing with no effort. Since then I use it semi-regularly in several dishes such as oatmeal, soups, porridge, patties, and poha in a mug (combine in a small bowl these onion flakes, poha flakes, salt, turmeric, cumin powder, garlic flakes/powder, mustard powder, red chilli powder, and oil. Then pour boiling water (just enough to soak), cover, and let it sit for 10 minutes, then stir and consume directly from the bowl. You can adjust seasoning based on preferences). The onion flakes add a mellow kick, which is not as strong as raw onions. There is no need to pre-rehydrate them if you’re going to use them in a watery or moist medium. These flakes are not good for sautéing in oil without rehydrating because it burns really quickly without wilting and caramelising. I don’t use this as replacement for raw fresh onions in gravies, biriyani and things. It’s packaged very well, with a ziplock. I have tried red onion flakes from another brand, but this particular product stands out as the best.
