Yes, the Gamut 2.0 will fit a 10.5 with LAW folder. However, if you're running a longer flash hider like a Surefire 3 prong/Warcomp, you're pushing it unless you're running a 10.3/MK-18.

Are the Vertex bags Berry Compliant?

Definitely seems like a question for the manufacturer. I can tell you it is a well made bag and I have transitioned into carrying it every day where I didn’t used to use an EDC bag. Should have opted for something other than black, but that’s my fault. Enjoy!

Will the side pockets hold a 32oz Hydro Flask-style bottle?

Yes!! The pocket sits slim but, the material is stretchable. I normally hold a 32oz Nalgene in mine.
