How many cups can you get from this size bag?

I have weighed brown rice flour that I spooned and leveled into a cup measure and I got 4.5 oz flour in a cup. This is very similar to weights of other flours, including wheat, spelt and others. The weight can depend on humidity, how well aerated the flour is, whether it is spooned or poured into the cup measure or scooped and leveled, so your results may vary. Over the years of baking I have learned to weigh ingredients rather than use a cup measure in many cases. I highly recommend purchasing a digital kitchen scale which makes the final product more consistent from batch to batch and usually makes it quicker to pre-mix flours as well (and to weigh out a cup of milk or 2oz butter/margarine rather than get another cup messy, or even to weigh envelopes for correct postage). For Annalise Roberts Food Philosopher GF Brown Rice Flour Mix (6c/2c/1c ratios), I use 690g Brown Rice / 230g Potato Starch / 100g Tapioca Flour and I get consistent, excellent results.

Question 2

If a GF recipe calls for brown (or white) rice flour, can I substitute Authentic Foods GF Brown Rice Flour Superfine?  Will it make any difference?

We use this for GF vanilla cakes and cupcakes. Often we use both white and brown rice - just in different amounts. This rice flour is excellent and definitely doesn't have that gritty texture in finished product. Our batter also has tapioca flour.

If you say superfine, is it like cornstarch fineness?

Yes, it is fine like cornstarch, but the best part is that there is no grittiness when the rice flour is used in baking.

Is it ok to store this flour on the shelf?  or, will i need to refrigerate/freeze to keep it fresh?

Accepted Answer

For the longest shelf life, it's best to store in an airtight container in the fridge or freezer. It will last for awhile on the counter or in the pantry, just make sure it is sealed tight to retain freshness.
