Does this eliminate Copper from shower water?

They do not. Sprite's filters focus on the Free Chlorine in Municipal Water. For the harder metals I would suggest looking at whole house filters.

Does this eliminate hydrocarbons from water?

Please check out the Sprite water filter website for that information. I do know it keeps my sensitive skin from drying out and itching.
