Q: Will the 64 oz torini pump fit this (monin 64 oz bottle) since the monin gets such horrific reviews? looking for options ....

No. I had both types and the opening is bigger on the Monin bottle. I found that the Monin pump works great if you remove the front tip from the nozzle. The opening is too small.

Q: Will this pump when you press it down and turn then stay in a locked position? That may solve the clogging issue that seems to be a complaint.

I order this pump ever time i order a new bottle of chocolate. I have never had a problem with the pump.

Q: how to clean it after use for storage and between uses? nozzle dries shut in about a day.

I have not found the nozzle to be very useful. It gets stuck very quickly. I have had to soak it in hot water and flush all of the dried syrup out. I find it easier to pour some of the syrup into a small Tupperware container and use a spoon to measure the correct amount.
