Is it sharp enough for everyday chopping like ginger etc ?

oh definately...very sharp. However, I find that chopping ginger is better with a smooth sharp knife, due to the fibers of the ginger getting in the way, as knives have a very fine toothed (serrated) edge. That is the only vegetable that it happens to. This is my personal experience.

Could I use this knife to score bread?

I don’t know why not. When baking bread you just need a sharp knife to score it. It doesn’t have to be large.

what's the difference between the blue handled knives and the black/white/red handled knives?
