Before you invest in a large jar of gelatine, I suggest you get some small Dr Oetker sachets from a supermarket (e.g. Sainsbury's) to try it out first. They cost hardly anything and you get four 12 gram sachets in a pack.

Hi what ratio do you put into a cold set cheescake please

Through trial and testing I've found 7g gelatine sets 500ml to a nice texture (i.e not rubbery). Disolve required g in 200ml hot water, let it cool to room temp them mix into your cream cheese/ cream mixture.
