It is produced from corn because the US government heavily subsidizes the production of corn. Allulose is a natural sugar (psicose) made commercially from high fructose corn syrup (HFCS) derived from the starches in corn. A GMO enzyme is used to convert the corn starch to glucose, another GMO enzyme is used to convert the glucose to fructose, and a 3rd GMO enzyme is used to convert the fructose to psicose (allulose). The enzymes are produced in transgenic bacteria or yeast and immobilized to a solid surface in a reactor for the conversion. While the enzymes are from transgenic (GMO) sources, they are not considered GMO since they contain no DNA. Allulose is not labeled as GMO, because it is a natural product with no GMO DNA contained within the product, that does not mean that its origins are free of GMO. So the question is how much of an anti-GMO zealot are you? Proteins (enzymes) and sugars (glucose, fructose, psicose) contain no DNA, hence are not required to be called GMO. If not, from what is it derived? Is it non-gmo? Thanks.** A: According to Scientists, Allulose is a monosaccharide also known as psicose, is a rare sugar. It’s found naturally in dried fruits like jackfruit, figs and raisins, but only in small quantities which makes it difficult to extract from its original source. Allulose is about 70% as sweet as sucrose, tastes just like it and even has the same chemical formula (albeit the hydrogen and oxygen atoms are arranged differently). Gram for gram, allulose has approximately 90% fewer calories than sucrose.
