Super sharp & super happy!
After using whatever was in the knife drawer to trim fat off of meat, a friend highly recommended this knife as his experience with it was equal to another knife by the same manufacturer for nearly twice the price. After having used the knife to trim fat on a prime rib and then on a brisket, all I can say is WOW! The knife is comfortable in my hand, trims and cuts beautifully, and is an essential item in my kitchen.

Excellent, heavy
I've had it for just a day at work now but it's made a good impression in that time. First off, this thing is HEAVY for the size and the steel it's made of (AUS6M), while softer than most Japanese stainless, can really take a beating. The balance on it feels very nice, perfect for a pinch grip. It's marketed as an all purpose but I think it favors meat over vegetables- it's a little thick to get perfect thin slices of root veggies or to glide through peppers, although it could be used for that in a pinch. Even though it's made in China unlike Kai's Wasabi or Shun knives, the finishing on it is very good. I may update this after some more time in the kitchen.

Not a great knife, but a very good knife for the money
Last Black Friday I bought a set of Wusthof Classic knives on sale and they've basically ruined me as far as knives go - I really like them...but I'm also not willing to pay for them all the time haha. But they have set the bar I measure other knives against. So in summary = this Kai Pro Chef's knife is a good knife...but it's not a great knife. I do feel it's a great buy for the price.PROS:Reasonably sharp out of the boxWell balanced (balance point is right at the front edge of the handle)It's a good looking knife with the polished and hammered finishCONS:Not as sharp as my (much more) expensive knivesThe hammered finish doesn't actually do anything to prevent stickingThe curve isn't super smooth, there's a spot near the tip that isn't quite right. It has a fine edge on it, just the curve radius changesThe blade is fairly thick, so it doesn't go through things as easily as a thinner blade. It maintains full thickness from the spine down most of the way towards the cutting edge, and maintains full thickness most of the way from the handle to the tip.I haven't tried sharpening it yet, so I can't comment on that. And I haven't had it that long either, only used it a dozen times or so, so can't say much on durability. It's a decent knife for the money, but I suspect the Victorinox 5" chef's knife is better as they generally have a nice thin blade.

Exceed my expectations
Super happy with this knife. Pro quality with affordable price. Compared with my other expensive branded knives and this one has a reasonable price but the quality is not compromised. The steel used is high quality and the handle is very comfortable to hold. A good buy!

Rusts after hand wash and air dry
I hand wash all my of fine cutlery. I was hesitant to purchase such an inexpensive knife but I'll only use it for brisket so I didn't want to spend $500+ on a uni-tasker knife. After only one use this knife rusted. I hand washed it like I do all my other knives and laid it on my drying rack to air dry. Very poor quality.

Not the Knife for Me & Not Very Sharp
This has a thicker cutting edge than I'm used to and gave too much resistance when rock-chopping (how I typically chop vegetables). The handle on top also wasn't very comfortable. I like that the handle isn't very big around (I'm a woman with smaller hands) but if you hold a chef's knife normally with your knuckle and thumb pinching the area of the blade just before it meets the handle, it may not feel comfortable due to a hard edge.I like that this knife does not have a bolster (the thick part at the end of the blade on many chef's knives), but that was about ALL I liked.I sharpened it a little upon realizing it wasn't sharp enough for me and it helped a tad, but I felt I shouldn't need to do that with a brand new knife, so I returned it for a refund. It also didn't have the best point and tip on it - a little wonky / wavy.Overall, I'm really disappointed with this knife for $30 - I have had a set of three kitchen knives that cost $12 which I preferred (they were by no means perfect, but at least they were sharper).I've been browsing for a long time for a knife within my budget that I REALLY love. I wanted a sharp, full-tang 6" chef's knife with a smaller handle and no bolster. Surprising how hard that is to find for under $50. This isn't it.

Great knife for for a great price.
First off, this is not a Henkel, Wustof, or Shun quality knife. That said, it is an exceptional knife especially for the price. This is made by the same company that does make Shun. I would consider this blade on par with a Forshner or Dexter Russell. The hammered pattern looks nice. The handle feels good in hand. The blade is very sharp & sturdy. I have been using it daily for 2 weeks in a professional kitchen. After two weeks of daily use, I had to finally run it across a steel to hone it. I feel it holds an edge very well. While it is not as refined as a more expensive knife such as a Shun or Wustof, it is a great inexpensive everyday banger, and if I lose it or drop it, no big deal.

Had to return....
This knife is decent. No major complaints. Head to return as the handle just want suited for my large hand. Had nice weight. Not heavy like Western style knives, but not cheap-light.

Its rather big, but the quality and sharpness is awesome
I didn't like how big it is. I prefer a smaller paring knife for handling, so I found the size somewhat wieldly. Having only one size is unfortunate.
