Q: Can this totilla press be used with gluten-free totilla recipe?

I don't think that the kind of dough matters. All this does is press them, it doesn't bake them. I've used it for flour and corn (no gluten) tortillas. It is a little hard to get the thickness even. If I had to redo my purchase, I would buy one that has the pressure point in the middle not the side. Hope I helped.

there is a small gap near the hing .

Q: Is this Factory preseasoned?

It is aluminum I have not heard of seasoned aluminum. It bends with use so the tortilla is uneven. I returned it.

Q: Can it be used to make chinese egg roll cookies?

I Don't know.....that isn't something I have tried before! Sorry I couldn't answer this question!
