Acceptable substitute for genuine raw version
Trofie, is sold in Italy-wide. They are sold as non-dried state, that is raw pasta to be kept in freezer to be eaten by the due date. Naturally, raw pasta and dried pasta cannot be compared for its taste, freshness. But given that nowhere in the world except in Italy that one can get freshly made raw Trofie, this is an acceptable substitute.This is a perfect pasta to be eaten with Genovese pesto (made with basil, pine nuts, and parmesan cheese).
